- Begin by cooking the lobsters in a large pot of boiling water for about 8-10 minutes, or until they turn bright red.
- Remove the lobsters from the pot and let them cool. Once they are cool enough to handle, remove the meat from the shells and set aside. Save the shells for the bisque.
- In a large pot, melt the butter over medium heat. Add the onion, carrots, and celery, and sauté until the vegetables are soft.
- Add the minced garlic and tomato paste, and cook for another 2 minutes.
